No Added Sugar Blueberry Cinnamon Muffins:

Ingredients:

  1. ⅓ c. no sugar added applesauce

  2. 2 tsp. olive oil

  3. ½ c. unsweetened vanilla almond milk

  4. ½ tsp. lemon juice

  5. ¾ c. rolled oats

  6. ¼ c. quinoa flour

  7. ½ tsp. baking powder

  8. ¼ tsp. baking soda

  9. ¼ tsp. Pink Himalayan salt

  10. ½ tsp. cinnamon

  11. 1/4 tsp. powdered stevia or blueberry liquid stevia

  12. ½ c. blueberries

Directions:

  1. Preheat the oven to 400 degrees.

  2. In a small bowl, mix the almond milk with the lemon juice and set aside for a few minutes.

  3. In another bowl, mix the oats, flour, baking powder, baking soda, cinnamon, salt, and stevia.

  4. Add in the applesauce and oil to the flour mix and process until mixture is smooth.

  5. Add in the lemon juice and almond milk mixture to the flour mixture.

  6. STIR in the blueberries, don’t process them unless you want blue batter.

  7. Divide the batter among 7-8 muffin cups.

  8. Bake 20-25 minutes until the tops are golden. -Makes 7-8 Servings -1 carb; 1 fat; 1 fruit; 1 dairy -1 serving= 1 muffin
