Quinoa Watermelon Summer Salad:

Ingredients: 2 cups cooked (popped) quinoa, chilled ahead of time in fridge 4 cups watermelon, cubed 1/2 cup fresh parsley, chopped 1/4 cup  fresh mint, chopped 1/4 cup red onion, minced Dressing: 1/4 cup extra virgin olive oil 2 tablespoons fresh lemon juice 1 tablespoon apple cider vinegar 1/2 teaspoon  sea salt 1/2 teaspoon black pepper

Directions:

  1. Whisk all of the vinaigrette ingredients (extra virgin olive oil, fresh lemon juice, apple cider vinegar, sea salt, black pepper) together until they’re well combined.

  2.  Combine the salad ingredients (quinoa, watermelon, parsley, mint, red onion) together in a bowl, then pour the vinaigrette over the salad.

  3.  Serve immediately (cold!) and store for 3 days in glass airtight container!
