Cauliflower Brownies


Cauliflower Brownies:





Ingredients:


2 cup raw cauliflower puree


1/2 cup unsweetened almond milk


3 drops liquid chocolate stevia


1 tsp. stevia powder


1/4 avocado


3 eggs


3 tbsp  water


1/4 c. ground flax


3 tsp powdered pure stevia


2 tsp ground cinnamon


1/2 tsp baking powder


pinch of salt

Directions:

1.  Preheat oven to 375F.

2.  Puree tender cauliflower in a blender, then add your almond milk and puree together for another 30 seconds.

3.  Whisk together eggs, stevia powder, baking powder, salt, and cinnamon in medium bowl.

4.  In a small bowl, combine flax and water, and set aside.

5.  Add the avocado to the food processor  with the cauliflower and process until broken down into very small chunks.

6.  Add chocolate stevia liquid to the flax mixture, and process one more time until all combined with the avocado and cauliflower.

7.  Add wet ingredients to dry and mix as best you can until it is a brownie type batter.

8.  Gently mix in almond milk, and then stir to combine.

9.  Place batter mixture into 9×9 loaf or baking pan and place in oven for 30 minutes. (They may need to be baked for 35 minutes max).

10.  Once done, remove from oven and let cool for a couple minutes.  Then flip brownies onto cloth, and out of pan.

11.  Let cool a couple more minutes on cloth, before slicing.

12. Store in an air-tight container in the refrigerator.

–Makes 36 small 2inx2in brownies -1 serving= One 2 in x 2 in brownie square (1 fat, 1/2 protein)
