Chocolate Avocado Chia Pudding

Ingredients: 2 ripe Hass avocados 1 dropper plain stevia ⅓ c. raw, defatted unsweetened cacao 1 tbsp. coconut oil 1 tsp. vanilla extract or vanilla bean stevia 1 tbsp. chia seeds 1/4 cup almond milk, unsweetened vanilla

Directions:

  1. Cut and scoop out pit of the avocado and place chunks in the blender. Add remaining ingredients. Combine all ingredients in a blender and blend until smooth and silky.

  2. Divide pudding among ramekins/cups and refrigerate for at least 3 hours before serving (this allows the chia seeds to thicken).

  3. Serve with chopped almonds or pistachios as a topping (optional)

-Makes 3-4 servings -1 serving= 1/2 cup
