Blueberry Protein Muffins

INSANELY GOOD BLUEBERRY OATMEAL MUFFINS

INGREDIENTS:


  1. 1 cup steel cut oats

  2. 1 cup unsweetened almond milk

  3. 1/4 tsp. stevia or monk fruit powder

  4. 2 tbsp Lakanto Syrup

  5. 1/2 cup unsweetened applesauce

  6. 2 egg whites

  7. 1 tbsp coconut oil

  8. 1 tsp vanilla extract

  9. 1 scoop collagen protein powder

  10. 1 tsp baking powder

  11. 1/2 tsp baking soda

  12. 1/2 tsp salt

  13. 1 cup fresh blueberries

  14. baking spray

DIRECTIONS:


  1. Preheat oven to 400°.

  2. Line a muffin tin with liners and lightly spray with oil.

  3. Place oats in a food processor or chopper and pulse a few times. Soak oats in almond milk for about 30 minutes.

  4. In a medium bowl combine stevia, vitafiber syrup, apple sauce, vanilla, egg whites, oil and mix well.

  5. In a third bowl combine protein powder, salt, baking powder, baking soda and whisk to combine.

  6. Combine oats and almond milk with monkfruit/stevia, applesauce mixture and mix well.

  7. Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries.

  8. Spoon into the muffin tin and bake for 22-24 minutes. Enjoy!!
