Turkey Quiche Cups

Ingredients:


  1. 2 eggs + 3 whites

  2. 1/2 cup cashew milk, unsweetened 

  3. 1/4 cup green onion chopped

  4. 1/2 teaspoon dried thyme

  5. Pinch of salt

  6. 1/8 teaspoon pepper

  7. 2 oz. Boar’s Head turkey breast thinly sliced, no salt

  8. PHASE 2 OPTION: 2 oz. mozzarella

Directions:



Preheat oven to 350 degrees F.


Whisk eggs and egg whites in a bowl.


Add remaining ingredients, except for turkey slices, and stir to combine.


Spray a muffin pan with cooking spray.


Fit one slice of turkey in each chamber of the muffin tin.


Spoon about 3 Tablespoons of egg mixture into each chamber so that it is 3/4 full.


PHASE 2: Use a fork to distribute cheese, if necessary. Cheese is optional for Phase 2!


Bake for about 25 minutes or until a toothpick inserted into the center comes out clean. The top will begin to brown. If it browns too quickly, then tent a piece of aluminum foil over the top.


Remove from oven and cool for about 10 minutes.
