Sweet Zuke CauliCups




Sweet Zuke CauliCups:



Ingredients:

  1. 1 tbsp ground flaxseed + 3 tbsp water (alternatively, you can use 1 whole egg)

  2. ¼ cup almond butter (or peanut butter or sunflower seed butter)

  3. 2 tbsp. monk fruit or stevia

  4. 2 small zucchinis (2 cups grated, blot excess water with paper towel)

  5. ½ cup almond milk (any milk will work)

  6. 1 tsp vanilla extract

  7. 3 cups riced cauliflower (fresh, not frozen)

  8. 1 tbsp baking powder

  9. 1 tsp cinnamon

  10. ¼ tsp salt

  11. Optional add-ins: ¼ cup dark chocolate chips and/or walnuts


INSTRUCTIONS

  1. Preheat oven to 380 F. Spray a muffin tin with nonstick oil spray or grease with coconut oil or line with silicone muffin liners.

  2. Place flax and water in small bowl. Stir and set aside to “gel.” Or use a whole egg.

  3. Place riced cauliflower in a large bowl then add grated zucchini, almond milk, vanilla extract, almond butter, monk fruit, and flax mixture, stirring to combine.

  4. Add baking powder, cinnamon, salt, and add-in’s of choice. Stir until just combined.

  5. Spoon mixture into muffin cups, filling to the top. You will have leftover batter if only using one muffin tin.

  6. Bake for 30 minutes, or until a fork comes out clean. Store cooled cups in an air-tight container in the refrigerator. These freeze well, too!

option: You may use oatmeal in place of cauliflower for a tastier treat. However, it will add significant caloric intake.
