Spinach Broccoli Omelet


Spinach Broccoli Omelet:

Egg White Omelet with Spinach and Broccoli


Ingredients


  1. Olive oil spray

  2. 1 cup raw spinach

  3. 5 egg whites (or the amount you need for protein)

  4. 1 cup steamed broccoli florets


Instructions




Heat olive oil spray in medium nonstick skillet over medium-low heat.



Add spinach; cook, stirring frequently, for 3 to 4 minutes, or until wilted.



Add egg whites. Do not stir. As eggs set, lift edges, letting uncooked portion flow underneath.



When eggs are almost set add broccoli; cook for 1 to 2 minutes, or until heated through. Gently fold in half.
