Pumpkin Millet Porridge

Ingredients

  1. 1/3 cup dry millet (PHASE3) or use quinoa or riced cauliflower

  2. 1 cups water

  3. 1/2 cup unsweetened almond milk

  4. pinch of salt

  5. 1/2 cup pumpkin puree (no sugar added-PHASE 3)

  6. 2 tsp. VitaFiber syrup or Lakanto Syrup or homemade syrup

  7. 2 tsp vanilla extract or powder, pure (alcohol free)

  8. 1 tsp pumpkin pie spice (no sugar added) or pumpkin pie stevia

  9. 4 chopped pecans OR walnuts (PHASE 2)


Directions:

  1. Combine millet (or quinoa or cauliflower oats), water, almond milk, and salt in a medium saucepan over medium high heat.

  2. Allow millet to come to a light boil and then reduce heat to a simmer for about 20 minutes, until thick. Stir often!

  3. When thick, stir pumpkin, syrup, vanilla, and pumpkin pie spice into millet.

  4. Portion porridge into four bowls and top each with a tbsp of pecans or walnuts.

(Makes 1 serving of carb and fat)
