Pumpkin Millet Porridge

Ingredients:
1/3 cup dry millet (PHASE3) or use quinoa or riced cauliflower
1 cups water
1/2 cup unsweetened almond milk
pinch of salt
1/2 cup pumpkin puree (no sugar added-PHASE 3)
2 tsp. VitaFiber syrup or Lakanto Syrup or homemade syrup
2 tsp vanilla extract or powder, pure (alcohol free)
1 tsp pumpkin pie spice (no sugar added) or pumpkin pie stevia
4 chopped pecans OR walnuts (PHASE 2)
Directions:
Combine millet (or quinoa or cauliflower oats), water, almond milk, and salt in a medium saucepan over medium high heat.
Allow millet to come to a light boil and then reduce heat to a simmer for about 20 minutes, until thick. Stir often!
When thick, stir pumpkin, syrup, vanilla, and pumpkin pie spice into millet.
Portion porridge into four bowls and top each with a tbsp of pecans or walnuts.
