Low Carb Protein Pancakes

Ingredients:

  1. 1/2 teaspoon Cinnamon

  2. 1 scoop Vanilla Protein Powder (optional)

  3. 1/2 teaspoon Baking Powder

  4. 5 Egg Whites, extra large

  5. For thicker pancakes: almond or coconut flour

  6. 2 tablespoons Water (add more if needed)

  7. 3-5 drops of Stevia  (Vanilla or English Toffee liquid by SweetLeaf Brand)

  8. Blueberries or blackberries, to top (optional)

  9. Choc Zero Maple Vanilla Syrup (1 tbsp)


Directions:

1. Mix all of the ingredients in a blender and blend until smooth. Possibly add water or club soda splash if it gets too thick.

2. Heat a nonstick griddle (or large nonstick skillet) coated with olive oil cooking spray over medium heat.

3.  Spoon about 1/4 cup of batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles and edges look cooked to a golden brown.

4.  Top with berries and syrup.
