Cottage cheese Egg Muffins

INGREDIENTS

  1. 1 cup diced vegetables (mushroom, bell pepper, tomato)

  2. 1/2 cup diced, cooked chicken

  3. 1 c kale or spinach, finely chopped

  4. 2 whole eggs+ 3 egg whites

  5. 3/4 cup cottage cheese, low-fat

  6. 1/3 c. white cheese

  7. 1 tsp paprika

  8. 1/2 tsp cayenne pepper

Directions:

  1. Saute vegetables, chicken, spices and kale or spinach over med-high heat until veggies are just soft (5-7 minutes)

  2. Combine eggs, cottage cheese and cheese in a large bowl. Stir in vegetable mixture until well combined.

  3. Spoon into a well-greased muffin tin. I fill my tins pretty full and usually make about 9 muffins.

  4. Bake at 375 degrees for 30 minutes or until eggs are set.
