Vanilla Chia Pudding:

Ingredients:
1 cup unsweetened almond milk (use your favorite such as cashew, flax, coconut)
1/4 cup chia seeds.
1 tsp vanilla extract, OR 1/4 tsp. vanilla bean powder OR seeds of 1 vanilla bean.
Sweetener: 1 dropper (2 tsp) Sweet Leaf Stevia, monk fruit, or 1/2 tbsp. organic 100% pure maple syrup (optional)
Berries: 1/3 cup blueberries, raspberries, strawberries or blackberries (optional for topping)
Directions:
Place ingredients (besides berry toppings) in mason jar (with lid) or bowl and mix well. Place covered in the refrigerator and mix every 1-2 hours until set if you are using a bowl. If using mason jar, just shake thoroughly with lid and place in fridge for at least 5 hours. Mixing is important since the seeds will fall to the bottom of the container, if not shaken or stirred every now and then it won’t set properly. Keep refrigerated in fridge overnight (up to 5 hours for best results).
It will last up to 5-6 days.
