Spinach&Kale Veg Burgers

Spinach & Kale Veg Burgers:


Ingredients:

  1. 1/2 bag of thawed and well drained chopped spinach

  2. 1/2 bag of thawed kale

  3. 2 egg whites (6 tbsp.)

  4. 1 whole egg

  5. ¼ c diced onion

  6. 1/4 c. part-skim shredded mozzarella cheese (PHASE 2)

  7. 2 tbsp. milled flaxseeds (PHASE 2)

  8. 1 tsp red pepper flakes

  9. pinch of salt

  10. ½ tsp garlic powder


Directions: 

  1. Make sure that the kale and spinach have been sauteed and drained of fluid.

  2. Mix all ingredients in a bowl thoroughly until combined. You may want to use a food processor or blender.

  3. Shape into patties and cook over medium high heat in a non stick skillet with a small amount of zero calorie cooking spray.

  4. Patties are done when they are golden and firm. (About 4-6 minutes )

  5. Use a portobello mushroom as a bun!

-Makes 1 serving (1 protein, 1 veggie, 1 dairy)
