Roasted Root Mash

Ingredients: 1 onion, quartered 2 garlic cloves 10 parsnips, peeled and chopped 1 lb celeriac or celery root, peeled and cut into 1⁄2 inch cubes 2 cups unsweetened almond or coconut milk 1/2 lb high-quality butter (*optional) Salt and pepper to taste
Directions:
Preheat oven to 350 degrees.
Toss onion, garlic, parsnips and celery root with olive oil and salt, and place on a heavy bottomed sheet pan. Place in oven and roast until tender, about 30 min., tossing frequently to prevent browning.
Remove from oven and let cool slightly. Working in batches, add a portion of ingredients to a Vitamix or food processor* with 1/2 cup almond or coconut milk. Puree until smooth. Continue with remaining vegetables and ½ cup of milk of choice at a time. *(depending on the desired consistency – use Vitamix for a creamier consistency)
Season to taste with salt and pepper, and garnish with snipped chives
