Roasted Root Mash

Savory Roasted Root Mash

Ingredients: 1  onion, quartered 2 garlic cloves 10 parsnips, peeled and chopped 1 lb celeriac or celery root, peeled and cut into 1⁄2 inch cubes 2 cups unsweetened almond or coconut milk 1/2 lb  high-quality butter (*optional) Salt and pepper to taste

Directions:

  1.  Preheat oven to 350 degrees.

  2.  Toss onion, garlic, parsnips and celery root with olive oil and salt, and place on a heavy bottomed sheet pan. Place in oven and roast until tender, about 30 min., tossing frequently to prevent browning.

  3.  Remove from oven and let cool slightly. Working in batches, add a portion of ingredients to a Vitamix or food processor* with 1/2 cup almond or coconut milk. Puree until smooth. Continue with remaining vegetables and ½ cup of milk of choice at a time. *(depending on the desired consistency – use Vitamix for a creamier consistency)

  4.  Season to taste with salt and pepper, and garnish with snipped chives
