Pumpkin Pie Cookie Bites

Ingredients
1 1/2 cups organic pumpkin canned or fresh
1 cup coconut butter, unsweetened, softened
8 tbsp butter, softened or use coconut oil for dairy free
1 tsp vanilla extract
1/2 cup almond flour
1/4 cup coconut flour
2 tsp pumpkin pie spice
pinch salt, optional
Optional: 1/2 cup sugar free chocolate chips
Instructions:
Blend the first 5 ingredients in a blender until smooth.
Taste and adjust sweetener if needed.
Whisk the remaining ingredients together in a bowl.
Slowly pour the dry ingredients into the wet in the stand mixer until combined.
If using chocolate chips, blend gently on low.
Using a cookie scoop, form 20-30 balls.
Keep refrigerated until ready to serve.
