PeaNutterButter Mini Cookies

PeaNutterButter Mini Cookies: Phase 2

Ingredients:

  1. 1 cup crunchy peanut butter, all-natural (no oil, sugar, or salt added)

  2. 1.5 tsp. stevia granules (SweetLeaf is best) or 1 dropper stevia

  3. 1 large whole egg

  4. 1 tsp. vanilla extract

  5. Add 1 tsp cacao, cinnamon or nutmeg if desired for added flavor

Directions:

  1. Mix all ingredients in a bowl.

  2. Using a cantaloupe melon scooper (about 1 tbsp.), scoop out and place on a cookie sheet. The cookie sheet does NOT need any added oil or spray because they will not stick.

  3. Bake at 325F for about 15 minutes. 1 cookie (size of melon ball scooper)= 1 fat
