Mashed Parm Cauli Puffs



INGREDIENTS

  1. 1 (20-ounce; 2.5 cups) Mashed Cauliflower – (package Green Giant® or Birdseye works)

  2. 3/4 cup grated Parmesan cheese (may use a different cheese of choice if desired)

  3. 2 eggs

  4. Preheat oven to 400°F. Spray a 24 cup mini-muffin pan generously with nonstick cooking spray.

  5. Microwave Green Giant® Mashed Cauliflower 8 minutes or until softened. Combine Mashed Cauliflower and Parmesan cheese in medium bowl. Stir in eggs until well combined.

  6. Evenly fill muffin cups with cauliflower mixture. Bake 25 minutes or until golden brown and toothpick inserted in the centers comes out clean. Remove from oven and cool 5 minutes before removing puffs. TIP:  These puffs are rich and decadent so if you’re not making them for a crowd, freeze leftovers for another time. Arrange puffs in a single layer in a resealable plastic bag and freeze. When ready to eat, microwave 2 puffs for 30 seconds or until hot.
