Keto Loaded Bacon Cauliflower Soup

INSTANT POT Loaded Cauli Bacon Soup:

Ingredients


  1. 1 medium yellow onion

  2. 4 garlic cloves, minced

  3. 5 cups cauliflower florets (about 24 oz.)

  4. 1 cup fingerling potatoes, chopped small

  5. 4 cups unsalted chicken broth

  6. 1 teaspoon kosher salt

  7. 1/2 teaspoon black pepper

  8. 1 cup plain full-fat Greek yogurt, divided

  9. 1/2 cup shredded white cheddar cheese

  10. 2 scallions, thinly sliced

  11. 2 slices bacon, cooked, and crumbled (OPTIONAL!)

Directions:


  1. Set Instant Pot to Sauté.

  2. Add onion and garlic; cook, stirring often, until softened, about 5 minutes. Add cauliflower, potatoes, broth, salt, and pepper.

  3. Cover Instant Pot, and fasten lid. Lock and seal steam valve. Set to High Pressure for 10 minutes.

  4. Release pressure naturally. Uncover and turn off Instant Pot.

  5. Blend soup using an immersion blender until smooth. (Or transfer contents into an upright blender, removing center piece from lid and covering with a towel before blending.)

  6. Stir in ½ cup of the yogurt.

  7. Ladle into bowls, and top evenly with remaining ½ cup yogurt, cheddar, bacon, and scallions.
