Kale Pesto

P2 Kale Pesto


5 Minute Vegan Kale Pesto - made with almonds, olive oil, kale, garlic, salt, and lemon juice. So easy, so healthy, so good! | pinchofyum.com

Serves: about 1 cup – 16 servings 1 serving= 1 tbsp.


Ingredients:

  1. 2 cups torn kale (no stems) and parsley, combined (1 cup kale chopped + 1/2 cup parsley)

  2. 1/4 cup olive oil

  3. ¼ teaspoon salt, to taste

  4. 1 clove garlic

  5. juice of one lemon

  6. ¼ cup raw almonds





Directions:

  1. Pulse the kale, olive oil, salt, garlic, and lemon juice in a food processor until smooth.

  2. Add the almonds and pulse until the almonds are ground to desired consistency.
