Egg White & Veggie Baked Casserole:
Ingredient List:
1- Bag of spinach (6 oz. bag)
4 green bell peppers
2 onions (any variety works)
10 Asparagus spears
1 small zucchini
40 grams of lean turkey
1 Egg white carton (16 oz.)
Salt free seasonings (such as ground pepper)
Recipe Instructions:
Cook spinach and lean ground turkey separately
Chop onions, asparagus, zucchini and peppers into 1/2 inch cubes
Preheat oven to 400F
Spray a 9-by-13 in pan with zero calorie non-stick spray
Fill the pan with chopped vegetables evenly
Place the cooked turkey evenly on top of the vegetables
Pour the liquid egg whites over the entire pan so that it is spread evenly throughout the dish
Place in 400F oven for one hour
Let cool
Slice dish into 10 servings

Remember to weigh your serving on the scale before eating! Depending on your protein need, your serving should be about 5 grams over your needs per meal. For example, if you need 18 grams of protein per meal, your serving size should weigh 23 grams on the scale (or 0.8 ounces).
