Cloud Eggs:

Ingredients:
Eggs and salt!
Preheat oven to 350 F and line a cooking sheet with parchment paper
Separate the egg yolks from egg whites
Place egg yolks in separate bowls after you separate them
Add a pinch of salt to the egg whites and beat with an electric mixer on low for 2-3 minutes
Dollop a large spoonful of egg white on the baking sheet (1 dollop per egg yolk)
Bake whites around 6 minutes until they are beginning to brown and no longer wet
Add egg yolk to egg white and bake another 3-4 minutes
Season with salt and pepper, if desired or serve on top of whole wheat toast or English muffin.
