Cloud Eggs

Ingredients:

Eggs and salt!

  1. Preheat oven to 350 F and line a cooking sheet with parchment paper

  2. Separate the egg yolks from egg whites

  3. Place egg yolks in separate bowls after you separate them

  4. Add a pinch of salt to the egg whites and beat with an electric mixer on low for 2-3 minutes

  5. Dollop a large spoonful of egg white on the baking sheet (1 dollop per egg yolk)

  6. Bake whites around 6 minutes until they are beginning to brown and no longer wet

  7. Add egg yolk to egg white and bake another 3-4 minutes

  8. Season with salt and pepper, if desired or serve on top of whole wheat toast or English muffin.
