Cake Batter Overnight Oats

Ingredients

  1. 1 cup rolled oats (certified gluten-free if GF)

  2. 1 1/2 tbsp. chia seeds

  3. 1 cup almond milk or cashew or coconut milk

  4. 3 tbsp. coconut, almond or cashew butter

  5. 2 tbsp. maple syrup

  6. 1/4 tsp almond extract

  7. pinch of salt

  8. 1/4 cup sugar-free sprinkles

*add splash of almond milk in morning for creamier oats

Instructions

  1. In a bowl, mix oats, chia seeds, almond milk, cashew butter, maple syrup, almond extract, and salt.

  2. Stir in sprinkles.

  3. Cover and place in fridge for at least 4 hours. My recommendation is to leave them in for 8-10 hours

  4. Refresh with splash of almond milk before eating.

Toppings:

  1. Add banana, berries, chia seeds, coconut flakes, or a drizzle of nut butter!
