Cake Batter Overnight Oats

Ingredients
1 cup rolled oats (certified gluten-free if GF)
1 1/2 tbsp. chia seeds
1 cup almond milk or cashew or coconut milk
3 tbsp. coconut, almond or cashew butter
2 tbsp. maple syrup
1/4 tsp almond extract
pinch of salt
1/4 cup sugar-free sprinkles
*add splash of almond milk in morning for creamier oats
Instructions
In a bowl, mix oats, chia seeds, almond milk, cashew butter, maple syrup, almond extract, and salt.
Stir in sprinkles.
Cover and place in fridge for at least 4 hours. My recommendation is to leave them in for 8-10 hours
Refresh with splash of almond milk before eating.
Toppings:
Add banana, berries, chia seeds, coconut flakes, or a drizzle of nut butter!
