Creamy Avocado Egg Salad (Healthy, Low-carb, Keto)

Ingredients


  1. 1 medium avocado pitted and peeled

  2. 2 hard-boiled eggs peeled and chopped

  3. 2 hard-boiled eggs, without yolk

  4. 2 tablespoons plain, low-fat  Greek yogurt

  5. 1 tsp fresh lemon or lime juice

  6. 1 tbsp minced cilantro parsley, dill or chives for flavor

  7. Salt and fresh pepper to taste

Instructions




In Medium bowl, Add avocados and mash with a spoon until chunky. Add the remaining ingredients and mix with a spoon until creamy.
