Apple Chia Pudding

ROASTED APPLE CHIA PUDDING










INGREDIENTS

  1. 2 tablespoons chia seeds

  2. 1/2 cup non-dairy milk (almond, cashew, or coconut)

  3. 1/2 teaspoon cinnamon

  4. 1 apple

  5. 1/4 teaspoon coconut oil

  6. stevia if desired


INSTRUCTIONS

  1. Add the chia seeds, cinnamon and non-dairy milk to a small glass, bowl or jar and stir together.

  2. Then cover and let sit in the refrigerator for 4 or more hours.

  3. While the chia pudding is sets, core and slice the apple, spread out in a baking dish and brush with coconut oil, roast in the oven at 350 degrees Fahrenheit for 20-30 minutes or until the apple slices start to brown and bubble.

  4. Let the apple slices cool, then layer onto the chia pudding, top with a dollop of coconut cream and a sprinkle of cinnamon, Enjoy!
