Apple Chia Pudding

ROASTED APPLE CHIA PUDDING

INGREDIENTS
2 tablespoons chia seeds
1/2 cup non-dairy milk (almond, cashew, or coconut)
1/2 teaspoon cinnamon
1 apple
1/4 teaspoon coconut oil
stevia if desired
INSTRUCTIONS
Add the chia seeds, cinnamon and non-dairy milk to a small glass, bowl or jar and stir together.
Then cover and let sit in the refrigerator for 4 or more hours.
While the chia pudding is sets, core and slice the apple, spread out in a baking dish and brush with coconut oil, roast in the oven at 350 degrees Fahrenheit for 20-30 minutes or until the apple slices start to brown and bubble.
Let the apple slices cool, then layer onto the chia pudding, top with a dollop of coconut cream and a sprinkle of cinnamon, Enjoy!
