Riced Cauli-“potato” Salad

INGREDIENTS
1/4 cup mayonnaise (avocado based such as Primal Kitchen Brand) Or Vegannaise for Vegan
1 tablespoon olive oil
1 teaspoon apple cider vinegar
3 cups (12 oz.) Riced Cauliflower, cooked, drained and cooled
1 stalk celery, chopped
1/4 cup chopped red onion
2 tablespoons chopped fresh parsley
Directions:
Combine mayonnaise, olive oil and vinegar in large bowl.
Stir in (Green Giant® Riced Veggies) or riced Cauliflower, celery, red onion and parsley until evenly coated.
Season to taste with salt and pepper.
