Riced Cauli-“potato” Salad




INGREDIENTS

  1. 1/4 cup mayonnaise (avocado based such as Primal Kitchen Brand) Or Vegannaise for Vegan

  2. 1 tablespoon olive oil

  3. 1 teaspoon apple cider vinegar

  4. 3 cups (12 oz.) Riced Cauliflower, cooked, drained and cooled

  5. 1 stalk celery, chopped

  6. 1/4 cup chopped red onion

  7. 2 tablespoons chopped fresh parsley

Directions:

  1. Combine mayonnaise, olive oil and vinegar in large bowl.

  2. Stir in (Green Giant® Riced Veggies) or riced Cauliflower, celery, red onion and parsley until evenly coated.

  3. Season to taste with salt and pepper.
