Italian Zoodles

Italian Zoodles:







Ingredients:


  1. ½ Cup of Basil, finely chopped

  2. 1/8 Cup of Extra Virgin Olive Oil

  3. 3 Zucchinis, spiralized

  4. 1/2 Cup of  part-skim Mozzarella, chopped into “1/2 chunks OR 1/4 c. parmesean shredded

  5. ½ Cup of plain pepitas

  6. 1 Cup of Heirloom Tomatoes, halved

  7. 1 tsp. red wine vinegar


INSTRUCTIONS

  1. Using a spiralizer, spiralize 3 zucchinis and place into a large bowl.

  2. Add chopped basil, tomatoes, pepitas and mozzarella or parm cheese.

  3. Mix the red wine and olive oil in a separate bowl then pour on to zoodles and toss lightly. -Makes 4 servings (1 fat; 1 dairy; 1 veggie) (1 cup= 1 serving) Add protein such as ground beef or turkey for a complete meal!
