Italian Zoodles:

Ingredients:
½ Cup of Basil, finely chopped
1/8 Cup of Extra Virgin Olive Oil
3 Zucchinis, spiralized
1/2 Cup of part-skim Mozzarella, chopped into “1/2 chunks OR 1/4 c. parmesean shredded
½ Cup of plain pepitas
1 Cup of Heirloom Tomatoes, halved
1 tsp. red wine vinegar
INSTRUCTIONS
Using a spiralizer, spiralize 3 zucchinis and place into a large bowl.
Add chopped basil, tomatoes, pepitas and mozzarella or parm cheese.
Mix the red wine and olive oil in a separate bowl then pour on to zoodles and toss lightly. -Makes 4 servings (1 fat; 1 dairy; 1 veggie) (1 cup= 1 serving) Add protein such as ground beef or turkey for a complete meal!
