Greek Cucumber Salad

Love this Cucumber Quinoa Salad! It's super easy to make ahead of time, it's naturally gluten-free, and it's made with lots of fresh cucumber, feta, basil, red onion, and a simple lemon Italian vinaigrette. Perfect as a side or main dish! | gimmesomeoven.com

INGREDIENTs:

SALAD INGREDIENTS:


  1. 1 English cucumber, diced

  2. 2 cups Chilled pearled or finely riced CAULIFLOWER

For higher carb: 2 cups chilled* cooked quinoa (see this tutorial for how to cook quinoa)

  1. 1/4 cup diced red onion or green

  2. 1/2 cup crumbled feta cheese (optional)

  3. 1/3 cup julienned or roughly-chopped fresh basil leaves

  4. 1 batch Lemony Italian vinaigrette (see below)

LEMONY ITALIAN VINAIGRETTE INGREDIENTS:

  1. 2 tbsp olive oil

  2. 2 tbsp apple cider vinegar or red wine vinegar

  3. 1 tablespoon fresh lemon juice

  4. 1/2 teaspoon Italian seasoning, homemade or store-bought (no sugar or dextrose or cornstarch)

  5. pinch of salt and black pepper

DIRECTIONS:


TO MAKE THE CUCUMBER QUINOA SALAD:

  1. Toss all ingredients together until combined in a large bowl.  Serve immediately (cold).

TO MAKE THE LEMONY ITALIAN VINAIGRETTE:

  1. Whisk all ingredients together in a small bowl until combined then add to the salad! May omit the oil for fat-free….but FYI- Healthy Fat helps you absorb nutrients 😉

-Makes 4-6 servings (2 cups per serving)
