Cucumber Tomato Salad

Cucumber Tomato Salad:

Ingredients:
3 cucumbers peeled & sliced
1/2 tsp sea salt
2 cups cherry tomatoes halved
1 small red onion thinly sliced
1 cup Kalamata olives
1 cup Feta cheese
Salad Dressing Ingredients:
½ cup extra virgin olive oil
¼ cup red wine vinegar
1 Tablespoon lemon juice
1 Tablespoon minced garlic
1 teaspoon dried oregano
1/2 teaspoon liquid stevia (1 dropper-full)
1 teaspoon salt
1/3 teaspoon pepper
Directions:
Sprinkle the sliced cucumbers with salt and let them sit on paper towels for 20 minutes. Cucumbers are very watery and this osmosis process allows you to draw out as much of the liquid as possible so that they remain crisp in your salad!
Meanwhile, combine the salad dressing ingredients. Pour into a jar. Cover, shake, and refrigerate while the cucumbers sit.
When the cucumbers are ready, combine the salad ingredients in a large bowl and add ¾ – 1 cup of Greek or Italian salad dressing.
Chill for one hour before serving. Leftovers can be saved for up to three days.
