Chili Lime Shrimp & Artichokes


Chili Lime Shrimp & Artichokes:

Ingredients:

Marinade


  1. 1 tablespoon extra virgin olive oil

  2. 2 tablespoons lime juice

  3. 1 shallot, minced

  4. 2 garlic cloves, minced (or ¼ teaspoon garlic powder)

  5. ¼ teaspoon kosher salt

  6. ¼ cup minced cilantro (plus more for garnish) Meat:

  7. 2 pounds raw shrimp, deveined and shelled

  8. Ground black pepper to taste

  9. 1 cup grilled artichokes, optional

Instructions:

  1. In a large bowl, add the marinade ingredients and mix well. Add the shrimp and toss to combine so they’re well coated.

  2. Mist a large skillet with olive oil spray and warm over medium-high heat. Add 1/2 of the shrimp to the skillet and cook for 2 minutes on one side, undisturbed. Then, flip and cook another 2 minutes or until shrimp is cooked through.

  3. Transfer to a plate and cover to keep warm. Reapply oil spray, add the second batch of shrimp and repeat cooking process.

  4. Add grilled artichokes and onions, if you desire (adds lots of flavor!)

  5. Transfer to a serving plate and garnish with extra cilantro and lime slices. Season with salt and ground black pepper to taste.

-Makes 2-3 servings
