Winter Squash Dinner

Quinoa and Acorn Squash Dish

Ingredients:

  1. 0.5 (1/2) acorn squash, seeded and cut into 1 inch pieces

  2. 1 cup cauliflower rice

  3. 3 oz. skinless chopped cooked chicken breast, optional

  4. 1/2 cup quinoa, cooked in water

  5. 2 cups kale, cooked (in oil and vinegar)

  6. 1 tbsp. lemon juice

  7. 2 tsp. olive oil (separated 1 tsp for cooking; 1 tsp for dressing)

  8. salt and pepper, to taste

Directions:

  1. Preheat oven to 400F.

  2. Place sliced acorn squash on a pan and brush with 1 tsp. olive oil and season with pinch of salt/pepper.


Scatter squash on prepared baking sheet and bake for 20-25 minutes or until softened.


While squash is baking, combine cooked quinoa,


Toast walnuts in a dry pan for 4-5 minutes over medium heat or until they smell toasted. Add to bowl with quinoa.


Add cooked squash to the quinoa and dress with lemon juice, remaining olive oil, salt and pepper (2 tablespoons olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper.) Toss well and add in the cooked chicken if using!


Season with additional salt or pepper if needed.
