DIY “Quest” Protein Bars:

PEANUT BUTTER PROTEIN BAR
Ingredients: 1 scoop vanilla protein powder 2 tbsp. Choc Zero Vanilla Syrup (can be bought on amazon.com) 1 tbsp. Almond Flour (phase 3) or flaxseed, ground (phase 2) 1 tbsp. Powdered Peanut Butter (phase 2) OR 1 tbsp. chocolate peanut butter protein powder 1 tsp. Stevia, powdered or 1 dropper liquid stevia 1 tsp. Vanilla Extract 2 tsp. Natural Peanut Butter (phase 2) 1 tbsp. Vanilla Protein Powder
Directions:
USE ONE SCOOP POWDER AND MIX POWDERED STEVIA WITH IT. In a small bowl mix together peanut butter and 1 tbsp. protein powder if using in phase 2. Separate into 5-7 pieces, roll into ball and set aside. Mix almond flour (phase 3) or flax (phase 2), protein powder, powdered peanut butter (phase 2) and stevia in a bowl and set aside. In a small pan, on low heat warm the vitafiber and vanilla extract until small bubbles form. You can also microwave vitafiber syrup in a mug for 30-40 seconds. Turn off heat and slowly add flour/protein mixture. Mix as well as you can then pour mixture between a folded piece of parchment paper and kneed until mixed entirely. Fold in peanut butter balls. Mold into bar shape (I used two large knives to press and flatten). Store in an air tight container at room temperature.
WHITE CHOCOLATE BIRTHDAY CAKE PROTEIN BAR
Ingredients: 2 tbsp. VitaFiber Syrup 1 scoop vanilla protein powder OR pineapple coconut powder 1 tsp. Stevia (powdered) or 1 dropper coconut stevia 1 tsp. Butter Extract (optional for cake bar) 1 tbsp. stevia sweetened white chocolate chips or powder
Directions: Mix together powdered white chocolate, protein powder and stevia, set aside.In a small sauce pan, heat vitafiber and extract on low heat until it bubbles. Turn off heat and slowly add protein mixture. Mix as well as you can then pour mixture between a folded piece of parchment paper and kneed until mixed entirely. Mold into bar shape or roll into a ball shape (use two large knives to press and flatten in between the two pieces of parchment). Store in an airtight container at room temperature for up to 2 weeks. Preferable to freeze them!
CHOCOLATE COOKIES: Ingredients: 2 tbsp. vitafiber syrup 1 tbsp. cocoa powder, unsweetened 1 tsp. maca, powdered 1/2 scoop protein powder, chocolate or vanilla 1/4 cup oats (phase 3)
Directions: Mix all ingredients together then spoon out mixture on to a non-stick baking sheet. Make about 3 little heaps of “dough” texture. Bake in the oven about 10-15 minutes at a low temp (about 325 degrees F). Bake until slightly puffed up. Best to eat fresh out of oven!
