Cauliflower “Everything” Bagels


Cauliflower “Everything” Bagels:

Ingredients:

  1. 1 head cauliflower, riced (about 3 cups) *Trader Joe’s frozen

  2. 2 tbsp almond flour

  3. 1 tbsp coconut flour

  4. 1 tbsp flaxseed, milled

  5. 2 whole eggs

  6. 1/2 tsp garlic powder

  7. 1/4 tsp Himalayan sea salt


“Everything” Topping

  1. 1/2 tsp poppy seeds

  2. 1 tbsp sesame seeds

  3. 1 tsp dried minced garlic

  4. 1 tbsp dried minced onion

  5. 1/4 tsp Himalayan sea salt


Directions:

  1. Preheat oven to 400 F.

  2. In a food processor, or using a hand grater, pulse/grate cauliflower until rice consistency, or buy Trader Joe’s frozen organic riced cauliflower to save time.

  3. In a bowl combine eggs, cauliflower rice, almond flour, coconut flour, ground flaxseeds, garlic powder, and Pink Himalayan salt.

  4. In a separate bowl, combine “everything” topping ingredients.

  5. Lay parchment paper on a baking sheet.

  6. Make 4 even sized balls and lay onto parchment paper.

  7. Sprinkle “everything” topping and slightly press them into the top.

  8. Bake for 15-20 minutes, or until bread-like consistency. Bake for 25-30 minutes if you make smaller balls.

  9. Optional: Broil on high for 3-5 minutes after baking.

  10. Optional: For extra crisp, remove from baking sheet and do the broiling step with the buns directly on the oven rack

  11. Remove from baking sheet and let cool directly on a cooling rack. -Makes 4 servings; 1 serving= 1 roll
